Though I gave a heavily sauced example, I also disagree. A GOOD sauce should make you want more of it, unlike a terrible sauce (see Alabama white sauce) which will make you hate life.

That said, the example has about twice as much sauce as I’d use.

I thoroughly disagree. Red sauce completely takes the taste of meat from the meat. White sauce isn’t made to drown the meat in, it’s made as a topping, though it was originally made for chicken. Same goes for South Carolina’s garbage excuse for a BBQ style, it just ruins the meat, less so than red sauce.
